La Degustation Boheme Bourgeoise is one of 2 Michelin starred restaurants in Prague. Feeling overwhelmed by our emotion-charged day at Terezin Ghetto Museum and sad it is our last night together, Johnny and I have decided to indulge.

Don’t ask me how she did it, but our concierge at the Kings Court Hotel managed to secure the last table at La Degustation on the recommendation of our friends at Taste of Prague. Our cup runneth over!

Slightly hidden down a side street we find and enter the quaint corner establishment. Chef Oldrich Sahajdák and his team work in clear view of the patrons, so quietly it is easy to forget they’re there.

Campari and soda in hand, we begin with the amuse bouche. Local Prague pickled radish with the slightest hint of lavender, “yeast toast’ and a smooth tartare crisp bread sandwich.

The first of our 8-course degustation comprises sweet and sour lettuce leaves with a dehydrated fruit powder. Next foie gras is desiccated with pistachios, the texture smooth and creamy.

A catfish fillet follows accompanied by dill, sesame seeds and kefir. Kefir, a fermented milk drink is presented as small crispy pellets.

Whipped pumpkin soup infused with the essence of local Prague ham precedes slithers of pikeperch, shaved kohlrabi, and nasturtiums.

Earthy mushrooms, reduced to a paste, make the base for lard cubes and dehydrated egg. The beef tongue, so rich and dense, is a meal in itself accompanied by yellow pea shoots and a light, fluffy apple marshmallow tube!

A combination of melted Romadur and Blatácké Zlato cheese covers rowanberries while the dessert; plums, chokeberries and raspberries, is topped with a smooth potato cream.

Every course has displayed innovation, technique and flavour to surprise and delight. The serving of beer with dessert and cheese is a first for us, but I suggest, not our last.

Sadly, this is our final post from Prague. Johnny is making his way to Chicago and I’m heading home tomorrow, but I’m curious to know, have any paraphernalians been to La Degustation? How was your experience?
